I have been having so much fun clipping out healthy and sugar free recipes for families to make the kids. Now that the weather is getting crappy, baking is a fun activity to do with the family. Baking unhealthy goods can cause harm in the long run. So why not find a way to bake something tasty and not worry about sugar content? I found a cool recipe for everyone to enjoy!
Diabetic Magic Cake
2 cups of water
2 cups of raisins
1 cup of unsweetened applesauce
2 cup of flour
1 tsp of vanilla
2 eggs
2 tbsp liquid sweetener
3/4 cup of cooking oil
1 tsp of baking soda
1 1/4 tsp of cinnamon
1/2 tsp of nutmeg
Cook raisins in water until water is gone. Cool. Then add applesauce, eggs, sweetener and oil. Mix well. Blend in baking soda and flour. Add remaining ingredients and mix well. You may add walnuts, or artificially sweetened fruit cocktail may be used instead of raisins, if desired. Bake at 350 degrees for about 40 minutes or more.
