I am trying to shake things up for the kids when it comes to dinner time. All they seem to want are chicken fingers! Yep, chicken fingers this, chicken fingers that. I mean come on, they have to accept that they just can’t live on chicken fingers for the rest of their lives! Because soon enough, they will be growing feathers. How am I going to explain that one to the pediatrician when they have their annual check ups? However, I found a recipe that they really did take well to. What was the big hit? It was nothing other than Top Notch Nachos.

I made it, and they loved it, and definitely intend to make it again! Here is the recipe.

Top Notch Nachos

  • Round tortilla chips
  • 1 can refried beans
  • 1 large tomato
  • 1 can chopped olives
  • 1 yellow onion
  • Shredded cheese if you want

Now just to let you know that I had forgotten to take a pic of the nachos, so I just found a royalty free one. Because I can promise you that jalapeno peppers is not part of this recipe! Although my daughter was curious about how spicy those really are. And we know how dangerous curiosity can be. Anyway there it is. If you are struggling to find a recipe that your kids will like, here is one. Now many would consider this to be an appetizer. However, you can certainly make a meal out of nachos. The kids sure did and loved it.
